I lately ate a delicious Mango&Spinach salad which is wonderful for summer days, and very easy to prepare. Here is the recipe:

mangos cut to strips 5 cm long 2 cm wide

pound spinach - young and small, cut to
strips
5 dried
apple slices cut to small pieces
The
size of the cutting is not important to the taste but to the shape of the salad
The
Sauce:
5
spoons of olive oil
5
spoons regular oil
6
spoons honey
4
spoons white wine vinegar
1
spoon sugar
Salt
& paper
Pore
the sauce 1/4 of an hour before eating
